Aromas of tart apples, vanilla, plum and cooked peaches with flavors of white grapes, tart cherries, light aged balsamic undertones and a puckering, oaky finish.

In the middle of brewing a batch of Polestar Pilsner, a local construction company hit a gas main on Ken Pratt Street near our brewery. The city had to kill the power to half of Longmont to prevent it from blowing up! We finished out the batch and let it ferment. the batch didn't quite get to our desired ABV but was still tasting great. Instead of letting it go to waste, we put it in some wine barrels, inoculated it with brettanomysces and left it alone. It was moved from warehouse space to warehouse space and forgotten about for 5 years. One afternoon, our President, Eric Wallace, opened it up, pulled some out and said it tasted like old style Lambic. he couldn't wait to get it on tap! The brewers pulled it out and separated it by barrel. Barrels 4 & 6 were left as individual barrels and served. Barrels 2, 3 & 5 were blended together.
